Canada | Hyatt Opens The Clayfield, a Wine-Focused Boutique Hotel in Niagara-on-the-Lake
Hyatt Hotels Corporation has opened The Clayfield, a boutique hotel dedicated to wine and wellness in the heart of Niagara-on-the-Lake, Canada's iconic wine region. The property joins The Unbound Collection by Hyatt, which is marking its tenth anniversary this year with several openings across the Americas. Born from a partnership between two local families, the project reflects the brand's strategy of developing independent properties with a strong sense of place.
Hyatt Hotels Corporation (NYSE: H) has announced the opening of The Clayfield, a boutique hotel dedicated to wine and wellness located in Niagara-on-the-Lake, in the province of Ontario. The property joins The Unbound Collection by Hyatt, the American group’s collection of independent hotels, and positions itself as a base from which to explore the region’s vineyards throughout the year.
A Project Born from the Meeting of Two Niagara Families
The Clayfield brings together the ambitions of two families from the region: the Feldbergs and the Hawleys. David Feldberg, founder of Stratus Vineyards, conceived the project after observing, in his own vineyard, that architectural design and hospitality were as much a part of the visitor experience as the wine itself.
Meanwhile, John Hawley and his family were completing an award-winning residential neighbourhood built around a lifestyle centre now known as Clayfield Commons. Their meeting with David Feldberg in 2019 revealed a shared vision built on excellence, creativity and design, giving rise to a joint project more ambitious than either could have achieved alone.
Architecture Conceived as an Extension of the Vineyard
Designed by Montreal-based practice Sid Lee Architecture, the building echoes the sculptural forms and curves of the Niagara Escarpment. Vertical timber elements evoke the orderly rows of the surrounding vines, giving the building an appearance that is both original and deeply rooted in its setting.
Rather than drawing on the classic conventions of wine-country hospitality, the interior design is built around materials, light and landscape. Large windows open onto the vineyards and gardens, while oak, natural stone and woven textiles combine to create interiors that are both sophisticated and warm.

Tamara Lohan, Global Brand Leader Luxury at Hyatt, said that the hotels which leave the strongest impression are often those that feel naturally tied to their surroundings, and that The Clayfield has been shaped by Niagara-on-the-Lake at every stage — in the architecture inspired by the escarpment and the vineyards, in the food and wine, and in the way the hotel connects guests to the region.
The dining offer centres on Terrain, a restaurant run by The Ascari Group and led by executive chef Joel LaBute, which showcases local producers and winemakers from the region. The restaurant comprises an 80-seat main dining room, a 25-seat bar and a chef’s table. The Rooftop at The Clayfield is, meanwhile, Niagara-on-the-Lake’s first rooftop venue, with views over the vineyards.
The hotel’s spa draws on the region’s clay-rich subsoil and its winemaking culture, offering clay-based treatments and vinotherapy rituals. On the events side, more than 500 sq m of flexible space includes a function room equipped to host everything from small meetings to larger-scale events.
Clayfield Commons, a Neighbourhood Built Around the Hotel
Surrounding the hotel, Clayfield Commons brings together a grocery store, a bank, a pharmacy and a medical centre, alongside independent shops, restaurants and a weekly farmers’ market. The aim is to showcase the local entrepreneurial fabric while giving both residents and visitors a new place to gather.
John Hawley, president of Village Developments Inc., said the team saw an opportunity to create a place that celebrates the talent of Niagara-on-the-Lake and becomes part of residents’ everyday lives, while giving visitors a new way to enjoy everything the community has to offer.
A New Milestone for The Unbound Collection by Hyatt
The opening of The Clayfield comes amid a period of sustained growth for The Unbound Collection by Hyatt, following the recent arrival of The Georgian in Santa Monica and Hotel 1000 in Seattle. The brand is still due to welcome The Digby in Savannah and Casa Duhau in Mendoza, Argentina, in 2027.
This development sits within the group’s wider momentum: as of 30 June 2026, Hyatt reported a portfolio of more than 1,500 hotels and all-inclusive resorts across 83 countries. 🔗 The group posted second-quarter 2026 results driven by luxury and a record pipeline, underlining the continued momentum of its independent and lifestyle brands.
