He went on to Dubai, where he served as Italian Restaurant Manager at Dusit Dubai from 2004 to 2006, before joining The Portman Ritz-Carlton Shanghai as Restaurant Manager and later Assistant Food & Beverage Director, a role he held until 2010. He then moved to Food & Beverage Manager at The Ritz-Carlton, Krabi, in Thailand.
A decade of rising responsibility within the Hotel Mulia group in Jakarta
Maurizio Moncalvo then settled in Indonesia for the long term. He joined Hotel Mulia Senayan in Jakarta in 2011, initially as Assistant Food & Beverage Director, before being promoted to Food & Beverage Director from 2015, a position he held for more than eight years. This twelve-year tenure at the same property formed the operational backbone of his Indonesian career, ahead of his move to The Ritz-Carlton Hotel Company in Jakarta in 2023, as Hotel Manager.

This move to Ritz-Carlton reflects a broader pattern of Indonesian-trained executives moving into other international hotel brands across the region, following the path of Subin Dharman, appointed General Manager of the Mandarin Oriental Taipei after leading The Ritz-Carlton Bali and The Ritz-Carlton Jakarta, Pacific Place.

As General Manager of ARYADUTA Bali, Maurizio Moncalvo will oversee rooms, food and beverage, banqueting, guest services and the overall management of the property. The group points to his extensive experience in hotel operations and food & beverage as central to this appointment.
