Dorchester Collection announced, on 10 September 2026, the appointment of Tristan Delaittre as general manager of Hotel Eden, one of the group’s flagship properties in Rome. His new role takes effect from 1st October 2026.

Tristan Delaittre had previously served as corporate director of food & beverage for Dorchester Collection, a role in which he had steered, since January 2024, the culinary strategy across the group’s ten hotels. He notably oversaw the development of dining concepts for Dorchester Collection’s forthcoming openings, including The Alba in Dubai, expected in 2028, and the Tokyo property, due in 2029.

A career built at Le Meurice, Paris

Before taking on the group-wide food & beverage role, Tristan Delaittre led, from April 2021 to January 2024, the food & beverage operations of Hôtel Le Meurice, in Paris, as a member of the executive committee. There he oversaw all of the hotel’s outlets: the two-Michelin-starred restaurant Le Meurice Alain Ducasse, the restaurant Le Dali, the 228 bar, room service for the hotel’s 160 keys, the banqueting spaces, and Cédric Grolet’s pastry boutique.

At the head of a team of 20 directors and deputies overseeing 170 staff, he led the implementation of departmental standards and procedures, as well as the development of budgets and performance management tools. He also drove the creation of new concepts during the Covid period, with takeaway offerings and private dining, before adjusting pricing strategy to strengthen higher-margin sales, particularly on wine and menus. He had joined Le Meurice in July 2019 as deputy food & beverage director.

Earlier experience at the Ritz Paris and in Italy

Tristan Delaittre‘s career in luxury hospitality was notably built at the Ritz Paris, where he served as room service director from 2017 to 2019, having previously headed the Ritz Bar from 2015 to 2017. There he led the redesign of the bar concept and the creation of a summer concept in the hotel’s garden, while improving the property’s service quality scores.

He also led operations at Ristorante Del Cambio, in Turin, between 2013 and 2014, where he oversaw the reopening of the fine-dining establishment, which earned a Michelin star five months after opening. Having started his career in France, where he undertook a placement at the Ritz Paris, he went on to train at EHL and then at the Glion Institute of Higher Education, in Switzerland.

Philippe Leboeuf’s statement

Philippe Leboeuf, chief executive officer of Dorchester Collection, commented on the appointment: “We are delighted to appoint Tristan Delaittre as general manager of Hotel Eden. Having spent more than seven years with Dorchester Collection, Tristan has a deep understanding of our culture, values and commitment to exceptional guest experiences. His collaborative leadership, passion for hospitality and dedication to excellence make him ideally placed to lead Hotel Eden and its talented team into the future.”

For his part, Tristan Delaittre responded to his appointment: “I am honoured to take on the role of general manager at Hotel Eden. Throughout my time with Dorchester Collection, I have admired the hotel’s distinctive character, rich heritage and remarkable team. Rome is enjoying an exciting period of growth as a global luxury destination, and Hotel Eden continues to set the standard for exceptional hospitality in the city.”

Hotel Eden, an address at the heart of Rome

Situated above the Spanish Steps, Hotel Eden has 98 rooms and suites, some of which offer views over the city or the Villa Borghese. The rooftop dining offering includes La Terrazza, focused on modern cuisine, and Il Giardino, dedicated to a more relaxed style of Roman cooking. The property also has a spa, The Eden Spa, with private treatment rooms, a relaxation area and a fitness studio.

Our analysis – This appointment reflects a clear pattern of internal promotion at Dorchester Collection, which is entrusting the leadership of one of its flagship properties to an executive trained over more than seven years within the group, including three years in food & beverage leadership roles at Le Meurice and then at corporate level. It comes as Rome continues its development as an international luxury destination, at a time when Dorchester Collection is also preparing its expansion into Asia and the Middle East, with the planned openings of The Alba in Dubai and a hotel in Tokyo.
